Cílem nutriční toxikologie je co nevíce omezit výskyt toxických, mutagenních a karcinogenních sloučenin v potravinách, a zajistit odpovídající přívod ochranných faktorů. Snížení přívodu nežádoucích látek lze dosáhnout dvěma způsoby: přísným dohledem na skladbu a kvalitu potravinových surovin a volbou šetrných technologií při jejich průmyslové a kulinární přípravě. Jde hlavně o využití těch postupů zpracování, které umožňují regulovat zahřívání (teplotu) potravin tak, aby se co nejvíce zamezil vznik sloučenin, které zdraví přímo poškozují.
